Lasagne

Sunday night's dinner and I achieved a first ~ woohoo!!!!! I made my first ever lasagne. I didn't make white sauce as I wanted it to be as healthy as possible. Here's the proof of my labour:
2 tins of chopped tomatoes, tomato puree, mixed herbs and seasoning and simmered to a rich consistency


Onions, carrots, courgettes, broccoli, button mushrooms, dried mixed mushrooms, veggie mince, herbs, seasoning and the mixed mushroom stock


Layered in an oven proof dish with lasagne sheets ~ 3 layers of each and topped with grated goat's cheese and parmesan

The end result ~ served with a crisp salad

Let Us Eat Lettuce

David's been growing salad from seeds and on Wednesday we ate our first lettuce. I was so pleased and thought I'd share it with you. It actually grew to a 2 header, so we had loads and it was rather yummy.

We're waiting for more to be ready plus cucumbers, tomatoes and spring onions. These have all been grown in either grow-bags or plant pots. Nothing as fancy as a vegetable plot as we don't have the room. Who needs one anyway if you can get results like this? We also have strawberries growing, but I'm not expecting much from them until next year.
